Breakfast Egg Salad

Hey there!

This is an excellent little recipe for breakfast or lunch, and you can easily make it ahead of time and just make your individual english muffin whenever you are hungry! Let's go!


Your mixed up ingredients (sorry I don't have a picture of them!)- just mash it all together and you're good to go.
Spread it on english muffin halves...
And broil or toast for about 5 minutes. Yumm!


Breakfast Egg Salad
-6 hard boiled eggs, peeled and chopped
-1 cup shredded/grated cheddar
-scant 1/2 cup mayo
-1/2 teaspoon dijon mustard
-1/2 teaspoon garlic powder
-1/2 package bacon, fried and chopped up
-4-6 english muffins, split
Mix all ingredients except english muffins. Spread on the english muffins, then broil or toast for about 5 minutes, until bubbly and starting to brown. Serve!


All finished, bubbly, cheesy, delicious!!

Four (or three) Ingredient Pizza

Hello there again!

This is what I think of as a 'cheater' recipe. One in which I do minimal work to come out with a yummy product- the kind of thing you can whip up and have ready on the table when you are super short on time. That said, you could also take this idea and add your own twists- different toppings, or making your own dough. Go wild!


Your simple ingredients- pre-made crust, caramelized onions, Boursin cheese, and bacon (optional)!!
Press your crust into a small cookie sheet (this one was approx. the same size as a 9x13'' pan), then top with your ingredients- pretty self-explanatory!
Just out of the oven- the crust is starting to brown, and so are the cheese and some of the onions.


Four (or three!) Ingredient Pizza
-1 refrigerated pizza crust
-1 package Boursin cheese (or similar)
-2 onions, caramelized
-crisped up bacon bits (I used two slices) (optional)
Pat pizza dough into a roughly 9x13'' greased baking sheet.
Top with the boursin cheese- just crumble it on, then top with onions and bacon.
Bake at 400 (or whatever your crust says) for about 15 minutes, until starting to brown.


Slice that pizza up and enjoy!! This stuff is fabulous- and fast!
