This is a recipe I've wanted to make for a long, long time. Ever since a fellow tasty-things-maker in my co-op during college made a delicious and amazing apple upside down cake, I've been in love. I just never got around to it! But, with the help of my awesome BF, I've conquered this recipe- super simple and super delicious! You probably have all of the ingredients already, too! Let's go!

Apple Upside Down Cake
-4 tablespoons butter
-1/2 cup brown sugar
-1/2 teaspoon cinnamon
-dash nutmeg (freshly ground if possible)

-1 large or 2 small apples, thinly sliced
------------------------
-6 tablespoons butter, softened
-1 cup sugar
-2 eggs
-1 teaspoon vanilla
-1 cup + 3 tablespoons flour
-1 teaspoon baking powder
-1/4 teaspoon salt
-1/2 teaspoon cinnamon
-1/2 cup milk
Boil first four ingredients for 30 seconds on medium heat. Pour into a greased 9'' cake (or pie) pan.
Layer the apple slices over the caramel sauce in the pan.
Cream the butter and sugar, mix in the eggs and vanilla, and stir in the dry ingredients. Gently mix in the milk at the end.
Pour your batter over the apples and caramel mixture.
Bake at 350 F for about 45 minutes, until a tester comes out clean (don't stick your tester in too far or it'll hit the apples and caramel!).
Let the cake cool just a few minutes, then turn out onto a large plate, so the apples are on top and the caramel pours over the cake. Yumm!
