Waffled Cinnamon Rolls

Hi there everyone!

This is more of an idea than a recipe- I mean, I totally "cheated" and used cinnamon rolls out of a tube- fast and cheap because I bought them at the discount store Grocery Outlet. Anyway, it's also an encouragement to use your kitchen tools creatively- your waffle iron is not just for waffles. So the BF and I decided it would be a great idea to take the cinnamon rolls we had grabbed up for fun and waffle them to see how that turned out- great! You should totally give it a shot- just waffle your cinnamon rolls on a well greased iron- simple as it sounds- let me show you!

Ingredients: cinnamon rolls from a tube, oil for the waffle iron, and you also need a waffle iron of course! This one is Belgian style.
Grease up the waffle iron, then put your cinnamon rolls on there!
Take them off when they've firmed up and seem cooked (this is not the conventional way of cooking, so use your best judgement- don't eat if the dough is gooey, for example).
Drizzle on your icing and enjoy a fun snack- way more fun, fast, and easy than making them in the oven- I've done this a couple of times since then because it really is a great way to make them!

Raised/Yeast Waffles

Hey everyone!

Yes, it's about time for another waffle/pancake post! I know I've done some raised waffles before, but this time I did them a bit differently and I thought I'd share that recipe with you. These are some of the crispiest-yet-still-tender waffles I've ever made/had. This is sort of a standard kind of recipe- I made my particular recipe out of several different recipes and suggestions I found in various places, so it's not like these waffles are my idea, but I can show them to you!! Let's do it.

Mix your yeast and water in a large bowl.
Add in your next group of ingredients...
...and mix well until it's smooth. Cover and let sit overnight.
The next morning: what it looks like.
Add in your eggs, vanilla, and baking soda.
Beat well until smooth. Batter will be thin.
Make in (non-Belgian) waffle maker- pour in just over 1 cup of batter.


Raised/Yeast Waffles
-1/2 cup warm water
-1 packet/2 1/4 teaspoons dry yeast
-2 cups warm milk
-1/2 cup melted butter
-1/2 teaspoon salt
-1 teaspoon sugar
-2 cups flour
-2 eggs
-1/2-1 teaspoon vanilla
-1/4 teaspoon baking soda
Mix warm water and yeast in a large bowl, let stand for 5 minutes.
Add in the milk, butter, salt, sugar, and flour, and beat until smooth.
Cover with plastic wrap and let stand on the counter overnight.
Just before making (while your waffle maker is heating up), beat in the eggs, vanilla, and baking soda.
Make in your (non-Belgian; it won't work) waffle maker- keep a close eye on them, they are thin and delicate and do not take long and can get too crispy easily if you don’t pay close enough attention. Enjoy!

Nora/Mom guest post: Oatmeal Yogurt Pancakes

I like to have pancakes for dinner on the weekend. It's an easy, warm, fragrant dinner. Using a recipe that has less white flour and fat reduces the guilt to practically nothing. Add some fruit and this is a world-beater. You can also shred and add a small zucchini ... adds moisture and you won't taste it at all.

Ingredients!
Gorgeous strawberries- use whatever's in season and whatever's your favorite!
Blend up your batter then stir in the strawberries.
Make sure to use a little bit of butter on your griddle/pan/comal- so worth it!

Oatmeal Yogurt Pancakes
-1 egg
-1 C plain yogurt
-2 T butter
-1/4 C flour (I use whole wheat)
-3/4 C oatmeal
-2 t brown sugar
-1/2 t baking powder
-1/4  t baking soda
-1/4 t salt
-fruit (chopped strawberries, blueberries, etc)
Put all ingredients in blender and blend till mixed. Pour into a bowl, stir in chopped fruit.
Preheat the pan or comal (so handy! every stove should have one). Slip a little bit of butter onto your grill. This is so worth it for taste! Turn pancakes when they get dry around the edges/ show bubbles.


Your finished pancakes, and some beautiful Mexican flowers and tile work as background!

Delicious. Great without any syrup at all! I think I will go eat the leftovers now.

Chocolate Waffles

Hey there everyone!

This is something I've been wanting to make ever since my first year of college (quite a while ago now!). That spring, my Mom came out to visit me at school and we stayed at a B&B for the weekend- breakfast was chocolate waffles. Ever since then they've lived legendarily in the back of my mind, but with Jordan's help, I finally put it into practice! I looked for recipes all over the place, and they varied wildly, so I decided to take what I had learned from the other recipes and modify the Fannie Farmer Special Waffles recipe that I use most often. Here are the results! Chocolatey and waffley and delicious. Let's get started!

The start of the recipe: milk, eggs, and butter mixture with dry ingredients on top.
Here's the batter mixed up, but without the egg whites.
Mix in a 1/3 of the whites, then fold in the rest.
Your finished batter- isn't it beautiful?
Make in your favorite waffle maker (or the one you have!)- I used my Belgian one.


Chocolate Waffles
-3 eggs, separated
-1 3/4 cups milk
-4 tablespoons butter, melted
-1 teaspoon vanilla
-1 1/2 cups flour
-1/2 cup cocoa
-1 tablespoon baking powder
-1/2 teaspoon salt
-6-7 tablespoons white sugar
Beat yolks lightly, then whisk in milk and butter. Mix in the vanilla.
Add in all the dry ingredients (not including sugar!), and mix well.
Beat the egg whites until stiff peaks form, adding the sugar in at the very end.
Whisk 1/3 of the whites into the batter, and fold the rest in.
Make in your favorite waffle maker and enjoy! Customize however you like.


Finished waffles! They are so chocolatey and delicious- I hope you try!!

Cheddar Bacon Waffles

Hey there!

These waffles are so delicious and filling I can't believe it took me so long to get around to trying savory-sweet waffles. I'm so glad I did- these are killer, with great reviews from the BF and my sister (as well as myself!). It's a simple waffle recipe, and you throw in cheese and crispy bacon (and maybe a few green onions) and you're done. Add maple syrup, and these babies will please any crowd. This recipe could be easily doubled or tripled if needed, this makes about 8 waffles in my Belgian maker.

Mix together wet ingredients, then add the dry ones.
And mix well!
Chop up your cheese a little more...
...and do the same to your bacon.
Add cheese and bacon to your waffle batter (and optional green onions).
Pour batter into a greased waffle maker...
...and bake to perfection!


Cheddar Bacon Waffles
-2 eggs, well beaten
-1 cup milk
-3 tablespoons veggie oil
-1 1/2 cups flour
-1 tablespoon baking powder
-2 teaspoons sugar
-1/4-1/2 teaspoon salt
-1- 1 1/2 cups shredded cheddar, chopped up
-10 slices bacon, fried and chopped (optional)
-2 green onions, minced fine
Mix the first three ingredients and whisk well. Whisk in dry ingredients.
Fry up the bacon and add the cheese, bacon, and optional green onions; stir well.
Cook in your waffle iron, spraying with veggie oil between batches.
Serve hot with maple syrup.


Serve warm with maple syrup- yummm!!

Easy Oatmeal Pancakes

Hello!

Here's a delicious recipe for some pretty great and pretty easy oatmeal pancakes. I love breakfast, I love pancakes, and I love to add oatmeal to almost anything bake-able, so the combination is natural for me. The oatmeal makes the pancakes a bit heartier than usual and these come out ready for any kind of topping you could desire!

Here are the dry ingredients being added into the wet ones...

And here's the finished batter- let it sit a minute or two and it will become a little more firm.

Oatmeal Pancakes
-2 eggs
-2 cups buttermilk (or regular milk with a few tablespoons vinegar added)
-6 tablespoons melted butter
-1 teaspoon vanilla
-1 1/2 cups flour (could use part whole wheat)
-1 teaspoon baking soda
-1 teaspoon sugar
-1/4 teaspoon salt
-2 teaspoons cinnamon
-1/2 teaspoon nutmeg
-2 1/4 cups oats
Beat the eggs, then whisk in the milk, then the melted butter. Add the dry ingredients and mix until combined. The batter will firm up as time goes along, but the pancakes will be mostly the same, so don't worry, it's just the oatmeal absorbing more of the liquid!
Heat up your pancake griddle or a pan on the stovetop to medium heat.
Grease the griddle, then dollop 1/3 cup for each pancake.
Let cook 2 minutes per side, and then enjoy with whatever kind of topping you like!

These pancakes go well with traditional syrup and butter, or jam, fruit, chocolate chips, anything you like, so get creative!

Raised Waffles

Hello!
These are some straight up delicious waffles. Easy to whip together, you just let them rise and then add the baking soda as the final touch and then throw them in the waffle iron- they come out just crispy but tender and completely delicious. Give these a try!

Here's the batter just mixed up- we mix up all the ingredients except the baking soda, despite what the recipe says.

And here's the batter after raising at least 1 hour and up to overnight.

And as the final step, you add the baking soda about 5 minutes before you start putting them on the waffle iron.

And the finished waffles! Aren't they beautiful?

We use these ingredients, but instead of following the recipe, we mix up the dry ingredients (except the baking soda) then add all the wet ones and mix it up, let rise, then add the baking soda. We also like to substitute dry milk for the milk and just add the corresponding amounts of dry milk and water.

Sourdough Waffles

Hello again! I made these sourdough waffles with my mom's sourdough starter, and they were absolutely phenomenal. Such a tender crunch when you bit into the waffles, and so good you almost don't need syrup! Try making some sourdough starter sometime (google it!) and make some waffles out of it, you'll enjoy them!


Here's the sourdough starter- my mom keeps some going almost all the time!

Here's the first mixture of ingredients...

And the finished batter!


Sourdough Waffles
-2 cups flour
-2 tablespoons sugar
-2 cups buttermilk
-1 cup sourdough starter
-2 eggs
-1/4 cup veggie oil or melted butter
-1 teaspoon vanilla
-1/2 teaspoon salt
-1 teaspoon baking soda
Mix together the flour, sugar, milk, and starter. Then add all other ingredients and mix well.
Make in your waffle iron of choice!

Power Pancakes

I’m going to share one of my most important, even crucial, self-developed recipes:
Practical Power Pancakes. As you may have heard by way of Rue, I often get to spend extended time in Mexico, San Miguel de Allende to be specific. And yippee for that! Anyway, I’m a practical and yes, a cheap person. Also, I love to cook and use the fantastic fresh veggies and fruits that are available her almost all year round. (Heave a sigh at this point for the mango, who sadly is out of season). So I eat pretty much like I eat at home -- except there’s a whole new set of ingredients. Power Pancakes solve a big problem for me. When I’m desperately hungry, about five times a day, I will grab and eat anything portable. If these are around, I can have a nutritious, tummy-filling meal with staying power instead of the tasty but short-lived pleasure of junk food.

Just about everything is stretchable in this recipe. Use whatever fruit you have around. I’ve used shredded apple, mashed banana, mangos, prunes cut up, dried apples and I almost always put in nuts, apple and craisins. You’ll know what you like (and have in the fridge rotting away, perhaps). Which reminds me, this would be a good recipe to use frozen bananas. The prunes I also consider essential. Once they’re cut up (wet your knife), they’re imperceptible and add a nice sweetness. If you don’t use prunes, I’d add 1/2 C of some kind of sweetener.



1 lb cottage cheese (I use low fat)
1 apple, shredded
1 C walnuts, cut up
1 C craisins
1 C prunes cut up small
2/3 C whole wheat flour
1/3 C oatmeal
1 T cinnamon (depending on strength & freshness of your cinnamon)
1/4 C milk
1 T vanilla
4 eggs


In a large bowl combine everything up to the eggs:


Separate eggs. Add yolks to large bowl and beat the whites till stiff:


Fold in a small amount of the egg whites — then add the rest and fold till smooth:

I hope you have a griddle or something better than this very mature little gas stove. I only have settings of “burning” and “burning more” so my pancakes are not as beautiful as yours will be. Luckily I’m in this for the eating and not the appearance. Anyway heat the pan, put some butter in and when it sizzles, you flop a big spoonful of the batter down to make each pancake. They are a bit fiddly to turn, but let the first side go a bit longer and you’ll get the hang of it.



How to serve??? Tonight I had them with granular sugar sprinkled on top and some limon juice (a small mexican lime, less acidic than large limes).
You could use lemon juice and confectioner’s sugar.
Or, mash up some nice soft fruit like peaches ....or mashed berries and why not a dollop of whipped cream?
And there are always the syrup options.
Go wild. Hope you enjoy.

One last note — These freeze really well. Separate sets of three with plastic wrap and stuff into a ziplock. Or put one layer on a cookie sheet and freeze till hard then throw them all in the bag.
