Honey Butter Salmon
-about 3 medium salmon fillets (recipe is adjustable)
-1 tablespoon dijon mustard
-2 teaspoons honey
-2 tablespoons melted butter
-panko or other bread crumbs
Make sure the salmon is about room temp- make sure that it isn't frozen if it came that way.
Preheat oven to 375 F. Grease a pan big enough for the salmon fillets. Lay the fillets in the pan.
Mix together the mustard, honey, and butter to make the sauce. Pour over the salmon, coating completely.
Top the salmon with a generous sprinkle of panko or other bread crumbs.
Season with salt and pepper.
Bake at 375 F for 15-20 minutes or until fish is flaky.

p.s. this is a glass pyrex pan from some decades ago that I found at Goodwill. It's pink on the outside and oh-so-cute, so keep an eye out for vintage finds like these at Goodwill and other thrift stores!
