Delicious (and Easy!) Egg Salad

Hi again everyone,

Recently I've become an egg salad convert. It started when I would go to the dining hall, and that would be the only appetizing option, so I'd make an egg salad sandwich. Finally I decided that I would make egg salad for myself, at home- why not? Have something tasty and delicious and also nutritious with which I can make a quick meal any time of day. I even make sandwiches and put them in a little tupperware and take them along with me if I'm in a hurry!

Here's on to the recipe and pictures...

Here are the ingredients, minus the eggs.

Here are the eggs after boiling, in the cold-water bath.

And here are your peeled eggs, ready to mash!


Egg Salad
-6 or so hard-boiled eggs
-2+ tablespoons mayo
-tiny squeeze lemon or lime juice
-2-3 stalks celery, diced
-salt and pepper to taste
To hard boil the eggs, put them in a saucepan and cover with water. Bring to a boil and boil for about 9-10 minutes. Immediately put the eggs into a cold water and ice bath to stop the cooking.
Peel the eggs, then put them in a container with the mayo and juice and mash well (or to your desired texture). Mashing with a potato masher works great, or just a fork.
Add more mayo to adjust.
Stir in the diced celery, then season with salt and pepper.


Here are your ingredients all ready to mash together.

And here's the finished salad. Not too appetizing looking by itself, but put it on a sandwich with lettuce and cheese and you're good to go!

Raised Waffles

Hello!
These are some straight up delicious waffles. Easy to whip together, you just let them rise and then add the baking soda as the final touch and then throw them in the waffle iron- they come out just crispy but tender and completely delicious. Give these a try!

Here's the batter just mixed up- we mix up all the ingredients except the baking soda, despite what the recipe says.

And here's the batter after raising at least 1 hour and up to overnight.

And as the final step, you add the baking soda about 5 minutes before you start putting them on the waffle iron.

And the finished waffles! Aren't they beautiful?

We use these ingredients, but instead of following the recipe, we mix up the dry ingredients (except the baking soda) then add all the wet ones and mix it up, let rise, then add the baking soda. We also like to substitute dry milk for the milk and just add the corresponding amounts of dry milk and water.

Butterscotch Bars

Hi!
These are some super-simple bars that are just fantastic. Easy, simple ingredients- you know what I like! Let's get to the recipe and pictures!

First cream the butter and sugar, then beat in the eggs and vanilla.

Then stir in your dry ingredients.
Then add in the oats and butterscotch chips.

And here are the bars topped with the extra chips and ready for the oven.

And the bars all baked up to perfection! I hope you try this recipe!

Butterscotch Bars
-1 cup butter, softened
-3/4 cups white sugar
-3/4 cups brown sugar
-2 eggs
-1 teaspoon vanilla
-2 cups flour
-2 teaspoons baking powder
-1 teaspoon baking soda
-1 teaspoon salt
-1 1/2 cups oats
-1 1/2 + the rest of the package of butterscotch chips
-1/2 cup chocolate chips
Grease a 9x13'' pan and preheat your oven to 350 F.
Cream together the butter and sugars. Stir in the eggs and vanilla.
Stir in your dry ingredients. Then stir in the oats and 1 1/2 cups butterscotch chips.
Pour your dough/batter into the pan and pat flat. Sprinkle with the remaining butterscotch chips and the chocolate chips.
Bake for 30-35 minutes, until golden brown.


Feel free to play with the add-ins in this recipe, or to halve or double the recipe- that will work fine. I hope you give these a try!

Cranberry Walnut Bread

Hello!
This is a delicious cranberry walnut bread that my mom made, and it is completely fabulous. I'll show you the way through pictures!

Here's the basic recipe- feel free to alter amounts or types of add-ins! (And by the way, WW flour = whole wheat or white whole wheat flour)

Here's the dough mixed up and ready to rise overnight...

Honey-Butter Salmon

This is a fantastically delicious recipe for salmon- simple, quick, you just throw it in the oven and there you are. It only takes a minute or two to mix up the sauce and throw together the ingredients.

Honey Butter Salmon
-about 3 medium salmon fillets (recipe is adjustable)
-1 tablespoon dijon mustard
-2 teaspoons honey
-2 tablespoons melted butter
-panko or other bread crumbs
Make sure the salmon is about room temp- make sure that it isn't frozen if it came that way.
Preheat oven to 375 F. Grease a pan big enough for the salmon fillets. Lay the fillets in the pan.
Mix together the mustard, honey, and butter to make the sauce. Pour over the salmon, coating completely.
Top the salmon with a generous sprinkle of panko or other bread crumbs.
Season with salt and pepper.
Bake at 375 F for 15-20 minutes or until fish is flaky.

p.s. this is a glass pyrex pan from some decades ago that I found at Goodwill. It's pink on the outside and oh-so-cute, so keep an eye out for vintage finds like these at Goodwill and other thrift stores!
