Grasshopper Brownies

These are dangerous. I made them last night and ate one. Now I haven't eaten another for fear I'll eat the whole pan! They're delicious and super easy to achieve. These are basically brownies with mint icing and a chocolate glaze on top... divine.

First you start with a pan of (half a batch) One Bowl Brownies:


And here's the delicious mint icing:

And with the glaze:



Grasshopper Brownies

1/2 Batch of One-Bowl Brownies

Mint Icing
-1/4 cup butter
-1-2 cups confectioner's sugar
-1 teaspoon mint extract
-milk
Cream together the ingredients, adjusting the sugar and milk until you get the consistency you would like.

Chocolate Glaze
-3 tablespoons chocolate chips (semi-sweet)
-1/2 teaspoon corn syrup
-2 tablespoons butter
Melt together in microwave, then drizzle over the brownies.

Freeze the brownies once done so that they harden up and are easier to cut. It also makes it easier if you bake the brownies in parchment paper- it comes off like magic.

If you want to make a full 9''x13'' pan, just double the recipe!

Caramel Spice Cake with Penuche Icing

This Caramel Spice cake is delicious. I found a caramel cake recipe online a while back, and this recipe is my end result of messing around with it a bit- the spice part definitely gives it the punch that it needs! And as Penuche Icing is caramel-flavored, I figured it would be the perfect match for this cake, and it turned out perfect. On to the pictures and recipe!


Here's the cake batter...

Caramel Spice Cake
-10 tablespoons butter
-1 1/4 cup white sugar
-1/2 teaspoon salt
-1/3 cup caramel syrup
-2 eggs
-1 teaspoon vanilla
-2 cups flour
-1/2 teaspoon baking powder
-1 teaspoon cinnamon
-1 cup milk
Mix the butter (melted) with the sugar and salt, then mix in the caramel syrup, eggs, and vanilla. Stir in the dry ingredients, then the cup of milk.
Bake at 350 F for 30 minutes.



And here's the Penuche Icing all mixed up.


Penuche Icing
-1/4 cup butter
-1/2 cup brown sugar
-1/8 teaspoon salt
-1/3 cup light cream or evaporated milk
-3 cups confectioner's sugar
-1/2 teaspoon vanilla
Microwave the butter and brown sugar until melted and bubbly. Let cool slightly, then mix in the salt, cream, and vanilla. Beat in the confectioner's sugar until it is the consistency you want. Makes about 1.5 cups.

Cookie Dough Dip

This dip is fantastic. I almost wanted to stop the blog post right there and hope that the pictures and ingredients would do it justice, but I just have to say it again- this is delicious and I really hope you try it!


Here are your simple ingredients, just waiting to become something delicious!


The Cookie Dough Dip, just whipped up.


Cookie Dough Dip
-1/2 cup butter
-1/3 cup brown sugar
-8 oz. cream cheese
-1/2 cup powdered sugar
-1 teaspoon vanilla
-3/4 cup chocolate chips
Heat the butter and brown sugar on the stovetop until bubbling. In the meantime, cream together the cream cheese and powdered sugar, then add in vanilla. Add the butter/brown sugar mixture and mix well. Stir in chocolate chips, and Enjoy!
This dip is great with fruit, pretzels, animal crackers, or just on a spoon! Get creative.



And here's the finished dip- it makes about 1 1/2 cups. This stuff is addictive!

Coconut M&M Blondies

Coconut M&M Blondies are delicious. They are delectable and finger-lickin' good. I've never before had much of a penchant for blondies- they've always seemed a bit bland to me, but these are out of this world, and I'm pretty sure all the credit goes to the browned butter- give this recipe a try!


Here's the M&M and coconut-studded dough.


And the dough pressed into the pan...


Coconut M&M Blondies
-1 1/4 cup butter
-2 cups brown sugar
-1/2 cup white sugar
-2 eggs
-1 tablespoon vanilla
-2 1/2 cups flour
-1/2 teaspoon salt
-2 1/2 cups coconut
-8-12oz M&Ms
Brown the butter in a saucepan over medium heat until bubbly and browned- 10 minutes or so. Then cream the butter and sugars, add the eggs and vanilla and stir well. Add the dry ingredients and stir until mixed. Stir in the coconut and M&Ms.
Press into a 9 x 13'' pan that has been lined with foil and greased.
Bake at 350 F for 25-30 minutes. Let cool completely, then slice.

Nutter-Butter Nutella Pie

This pie is delicious. It's so good it'll make you dance around and scream with joy. Really, that good. I've made this twice recently and friends and housemates (and myself) have gobbled it up with abandon. So on to the recipe!


Here's the pie in all its glory.


Nutter-Butter Nutella Pie
-24 nutter-butter cookies
-1/4 cup melted butter
-16 oz. cream cheese
-3/4 cup white sugar
-1 teaspoon vanilla
-1/2 cup nutella
-1/2 cup whipping cream
Crush the cookies, then mix with the melted butter and push into the bottom and sides of a pie pan.
Cream the cream cheese and sugar, then add the vanilla and nutella and mix well. Add the whipping cream and whip until thick.
Pour the nutella mixture into the crust you have made and chill for a few hours. Then enjoy!

Chocolate Coconut Cookies

Here's a delicious and easy recipe for some delectable chocolate coconut cookies. I have to get to work, so this is a short post, but I hope you enjoy the recipe! Feel free to use the chocolate cookie base for other kinds of cookies as well- add in anything you like instead of or in addition to the coconut!

Chocolate Coconut Cookies
-1 cup butter, softened
-1/2 cup white sugar
-3/4 cup brown sugar
-2 eggs
-1 teaspoon vanilla
-1 3/4 cups flour
-1/4 cup cocoa
-1 teaspoon baking soda
-1/2 teaspoon baking powder
-1/2 teaspoon salt
-2 cups coconut
Cream the butter and sugars, then add the eggs and vanilla and stir well. Add the dry ingredients and mix until combined. Then add the coconut.
Bake at 350 F for 10-12 minutes on greased cookie sheets.

Drop Biscuits

"Biscuits!", my housemate said, yearning for their deliciousness, and biscuits I made. This is another quick post as school is still at full tilt near the end of the semester, so I'll leave you with a quick and easy recipe for drop biscuits that are good with nearly anything, sweet or savory!


Here's the batter, all ready to go.


And the biscuits all ready for the oven.


Drop Biscuits
-2 cups flour
-1 tablespoon sugar
-2 1/2 teaspoons baking powder
-1/2 teaspoon salt
-1/2 cup diced chilled butter
-1 cup milk
Mix together the flour, sugar, baking powder, and salt in a large bowl. Add the chilled butter and cut in using a pastry cutter, two knives, or with a few quick pulses on your food processor. Slowly add the milk, stirring as you go, until the dough forms together.
Drop the biscuit dough onto greased cookie sheets and bake at 450 F for 12-15 minutes.
