Cinnamon Roasted Almonds

Hey everyone!

These are addictive. I'll just start there- if you make these, be prepared to eat them, or be prepared for everyone around you to eat them! These are sweet with a hint of salt and are crunchy and delicious. I will definitely be making these again!

Your arsenal- super simple, and you might even have everything already!
Your three ring circus- almonds, egg white and vanilla, and your sugar mixture.
Toss the almonds in the egg white mixture.
Then toss the almonds with the sugar mixture.
Pour almonds onto your greased baking sheet, shaking it to make them into one layer.
Here they are after 20 minutes at 250 F.
And here they are after 1 hour at 250 F. Delish!!

Cinnamon Roasted Almonds
-3-4 cups raw almonds
-1 egg white
-1 teaspoon vanilla
-1/2 cup brown sugar
-1/2 cup white sugar
-1/2 teaspoon salt
-1 teaspoon cinnamon
Grease a large baking sheet with sides. Beat the egg white and vanilla, toss in the almonds until well coated.
Mix together the dry ingredients and toss the almonds in that next. Spread on your baking sheet and shake to make a single layer.
Bake at 250 F for about 1 hour, stirring ever 20 minutes.
Cool and store in an airtight container.

Your finished, beautiful, delicious product. Dig in! I promise you won't be able to have just one!

Savor it!
love, rue
