Mint Meltaways

Mint Meltaways are a cookie that I have enjoyed since childhood, and that I continue to make around the holiday season today. This recipe comes by way of my grandmother's recipes, though it is basically a shortbread cookie with butter mints in it- delicious! And the name comes from the fact that the mints literally 'melt away' to an extent during the cooking process. This is a super easy and really yummy recipe, so let's get down to it!

Mint Meltaways Recipe
-1 cup butter (2 sticks)
-1 cup crushed yellow butter mints (5 oz. package)
-2 cups flour
-1 tablespoon sugar for sprinkling on top
Cream butter well in an electric mixer. Add the mints and mix well. Add the flour and mix together at low speed. If you like a sweeter cookie, you can add a tablespoon or two of sugar at this point as well.
Cover the dough and chill for 1 hour.
After it has chilled, pat the dough out into a square or rectangle between 9" x 9" or 9" x 13" approximately. Sprinkle the dough with sugar. Cut into squares, use cookie cutters, or cut into any shape you like and place on an unbaked cookie sheet.
Bake at 325 F for 15-18 minutes, or until just pale golden brown- do not overbake! Cool on the cookie sheet for a few minutes, then transfer the cookies to a cooling rack to finish cooling.
Store tightly covered.
